Spicy Tuna Roll

When ordering Sushi Rolls at Japanese Restaurants, I’m likely to pick Philadelphia Rolls, some deep-fried rolls, and the Spicy Tuna Roll off the menu! There is something delicious about these raw tuna rolls! I’ve made these rolls countless of times and like to use raw fish like salmon when I can. This recipe is simple and the Tuna Steaks can be bought from the freezer section of major grocery stores! So, you don’t have to visit a fish market or descale anything in that matter!

Tuna Fish (Negitoro)

If you’re a Sushi Chef you probably know what Negitoro means, which is basically the leftover minced meat that won’t make pretty Sashimi slices anymore. Since most of us, don’t cook with raw fish that much, we’re likely not going to have leftover minced seafood laying around. Which, makes it convenient to buy frozen Tuna Steaks. If your precisely looking for Sushi-grade or Sashimi-grade tuna steaks your likely to pay almost double for something that was just judged to be safe worthy to eat raw.

At the end, you’re still eating raw fish so if you’re concerned about the safety, go for the wild-caught selections for a higher grade. Furthermore, it is likely most fishes go through some freezing point to kill parasites so the frozen tuna steaks can come in much handier and are easier to buy.

Ingredients

Spicy Tuna Roll:

  • 8 oz tuna steak minced

  • 1/3 cup Capelin roe

  • 2 tbsp spicy mayo

  • 3 cups cooked Sushi Rice

  • 6 nori seaweed sheets (half-sheets)

Instructions

    Mix together the raw tuna, capelin roe, and spicy mayo. Set aside.

    Place a half-sheet of nori onto a sushi mat. Spread 1/2 cup of seasoned and cooked sushi rice over the nori.

    Flip and fill the bottom end with the tuna mixture.

    Roll and slice each roll into 6-8 pieces.

Notes:to make sushi rolls with the nori sheets appearing on the outside; don't flip over after spreading the rice.

  • Capelin Roe goes by the name Masago.

Can I use Canned Tuna for Tuna Rolls?

You could use canned tuna but it won’t be the same. Raw tuna is what makes a spicy tuna roll delicious with its silky flesh and spicy-mayo concoction! However, canned tuna is dry and flakey so there will be a drastic difference in taste to the original Spicy Tuna Rolls.

Is raw fish safe to eat?

Raw fish is safe to eat if certain guidelines are followed. For example, freezing your fish at a certain temperature of -4 degrees Fahrenheit (-20 degrees Celsius) for several days, or frozen at -31 degrees Fahrenheit (-35 degrees Celsius) for 15 hours, will kill any parasites.

Some people even take the extra step of curing fish to consume raw (a salt and sugar brine.) While others will just back away from the idea. I usually buy Tuna steaks frozen solid in packages that have been vacuumed sealed and have never encountered a bad experience that way. Even when I used raw salmon that I bought fresh and froze turned out well for me.

You should test your fish and determine whether it’s safe to eat raw by inspecting the smell, color and other guidelines to kill any parasites. Tips for Spicy Tuna Roll:

  1. Top Sushi Rolls with thinly sliced Sashimi or Capelin roe before slicing.
  2. Drizzle rolls with eel sauce or spicy mayo (delicious!)
  3. Sprinkle toasted sesame seeds over rice before filling.
